Cherry Cheesecake Topping

  1. Drain cherries, reserving liquid.
  2. Mix 3 tbsp sugar and 112 tbsp potato starch in small saucepan. Slowly add 23 cup cherry liquid, mixing with each addition so that no clumps form. (Set remaining liquid aside for other uses.) Add 1 tsp lemon juice.
  3. Cook on medium-low heat, stirring gently but constantly, until mixture thickens.
  4. Pour onto cherries and toss gently to coat.
  5. Spread topping on prepared cheesecake.
