Cherry Cheesecake Topping
Ingredients
- 1 56 oz. jar sour cherries in light syrup
- 3 tbsp sugar
- 11⁄2 tbsp potato starch
- 1 tsp lemon juice
Instructions
- Drain cherries, reserving liquid.
- Mix 3 tbsp sugar and 11⁄2 tbsp potato starch in small saucepan. Slowly add 2⁄3 cup cherry liquid, mixing with each addition so that no clumps form. (Set remaining liquid aside for other uses.) Add 1 tsp lemon juice.
- Cook on medium-low heat, stirring gently but constantly, until mixture thickens.
- Pour onto cherries and toss gently to coat.
- Spread topping on prepared cheesecake.
