Ingredients
- 1 c flour
- 1⁄4 tsp salt
- 3⁄4 tsp baking powder
- 1⁄2 tsp baking soda
- 1⁄4 c sugar
- 1 c buttermilk
- 2 tbsp melted butter
- 1 egg
- 1⁄2 tsp vanilla extract
- Oil for frying (e.g. corn oil, avocado oil, etc.)
Instructions
- Preheat griddle on medium-high.
- Sift together dry ingredients.
- Whisk together wet ingredients.
- Add wet to dry, slowly, whisking as you add, so that no lumps form.
- Add 1 tbsp oil to griddle. Drop tablespoons of batter onto griddle. Fry one side until top is full of stable bubbles, flip, fry other side 1 minute.
- Repeat until batter used up.
