Oladyi (Russian pancakes)

  1. Preheat griddle on medium-high.
  2. Sift together dry ingredients.
  3. Whisk together wet ingredients.
  4. Add wet to dry, slowly, whisking as you add, so that no lumps form.
  5. Add 1 tbsp oil to griddle. Drop tablespoons of batter onto griddle. Fry one side until top is full of stable bubbles, flip, fry other side 1 minute.
  6. Repeat until batter used up.
