Underside. Mmm. Look at that beautiful crust. The bagel shop down the block sure makes a damn fine bagel. -

Sliced in half. Where is the hole?! As you see, the bagel offers a continuous, unbroken surface, for the spreading of cream cheese or any other filling. -

Today, however, we are not using cream cheese. This is Столичная колбаса [Stolichnaya kolbasa]—a Russian salami. -

Extra-sharp cheddar. -

Sliced hardboiled egg. -

Dijon mustard. -

The bagel sandwich is complete! But is it ready for eating? No! It must be cut in half. -

How to cut it in half, without some of the sandwich falling out all over the place?! -

Wrap it up real good. (This is heavy-duty aluminum foil.) -

Then, cut. Unwrap, and eat! Delicious!
